Background: Chef Sandro Nardone was a founder of Angelina’s Pizzeria and now he has struck out on his own. He grew up in the business — his parents owned a fish and chips joint in Ireland where he worked as a kid each summer. His mother made her own charcuterie, produced her own olive oil and her polenta was famous. His aunt made legendary scamorza; Pope John Paul II was a fan.
